BASTING SAUCE FOR GRILLED FISH

1/3 c. margarine 3 tbsp. lemon juice 2 tbsp. fresh chopped dill, parsley or chives 1/8 tsp. pepper

In small saucepan over medium heat melt Promise. Add lemon juice, dill and pepper. 3. Baste fish with sauce while grilling or broiling. Yield: 8 servings.

GRILLED PINEAPPLE WITH MAPLE BUTTER

1 pineapple 3 tbsp. butter 1/4 c. maple syrup 1 tbsp. toasted chopped hazel nuts

Heat grill. Quarter pineapple lengthwise, leaving fronds on. Melt butter and stir in maple syrup. Grill pineapple quarters on one cut side until golden, abut 5 minutes. Turn the quarters and brush cooked side with maple syrup-butter mixture. Cook second side until golden, about 5 minutes. Brush it with maple butter. If you like, cut through each quarter to loosen flesh from skin and then cut crosswise into bite size pieces. Pour remaining maple butter over pineapple and top with chopped hazel nuts.

GRILLED APPLE RINGS

1/3 c. sugar 1/4 tsp. ground cinnamon 4 med. baking apples, cored and cut crosswise into 1-inch slices 1/4 c. margarine, melted

Mix sugar and cinnamon; reserve. Brush both sides of apple slices with margarine. Grill apples 3-4 inches from medium coals 8 minutes; turn. Sprinkle with sugar mixture (sugar melts while other side browns). Grill 5-10 minutes

GRILLED APPLES (1 WW Point)

1 apple 1 tbsp of brown sugar substitute, like Sugar Twin 1/4 tsp ground cinnamon

Core the apple and discard core. Place apple on a large enough piece of foil to wrap around the apple and twist the ends into a handle. Put the brown sugar substitute and cinnamon in the core and wrap apple. Place on grill. The recipe says grill 10-15 min. I usually put this on the grill in the middle of grilling the meat and take it off when the meat is done. It is tender and juicy! Multiply as needed.

GRILLED BARBECUED CHICKEN (7 WW Points)

Makes 6 Servings 1 teaspoon salt 1 teaspoon paprika 1/4 teaspoon pepper 3 to 3 1/2 pounds cut-up broiler-fryer chicken Barbecue Sauce (below Barbecue Sauce 1 cup ketchup or 1 can (8 ounces) tomato sauce (8 ounces) 1/2 cup hot water 1/3 cup lemon juice 1 teaspoon salt 1 teaspoon sugar 2 teaspoons paprika 1/2 teaspoon pepper 1 tablespoon Worcestershire sauce 1 medium onion, finely chopped (1/2 cup) Heat all ingredients to boiling in 1-quart saucepan, stirring occasionally.

Brush grill rack with vegetable oil. Heat grill to medium heat. Mix salt, paprika and pepper. Sprinkle both sides of chicken with salt mixture. Place chicken skin side up on grill rack. Cover and grill 4 to 6 inches from heat 15 minutes; turn chicken. Brush with Barbecue Sauce. Cover and grill 20 to 25 minutes longer, turning and brushing with Barbecue Sauce, until juice of chicken is no longer pink when centers of thickest pieces are cut. ------ To Bake: Heat oven to 425ºF. Mix salt, paprika and pepper; mix in 1/2 cup Gold Medal© all-purpose flour. Sprinkle both sides of chicken with flour mixture. Melt 1/4 cup butter or margarine in rectangular baking dish, 13x9x2 inches, in oven. Place chicken, skin sides down, in dish. Bake 45 minutes; drain and turn chicken. Reduce oven temperature to 375ºF. Spoon hot Barbecue Sauce over chicken. Bake 15 minutes longer or until juice of chicken is no longer pink when centers of thickest pieces are cut.

GRILLED CHICKEN KABOBS

1 lb. chicken breast, boned & skinless cut into 1/2" strips 1/2 c. French salad dressing 1 tbsp. Worcestershire sauce 1 tsp. lemon juice 8 slices of bacon

In a 2 quart baking dish or plastic bag, combine dressing. Worcestershire sauce and lemon juice. Mix well. Add chicken, turn to coat. Marinade in refrigerator for 2-3 hours; turning once. Drain chicken (save the juice). Thread chicken and bacon pieces alternately on 12 inch skewers. Place on grill (BBQ) for 15 minutes, turning and brushing often with remaining marinade. Makes approximately 4-5

GRILLED EGGPLANT WITH PROSCIUTTO AND TOMATO

1 med. eggplant, cut into 1/4-inch slices 1/2 lb. prosciutto sliced thin 4 plum tomatoes 1/2 c. Parmesan cheese Garlic toast

Marinate eggplant in seasoned olive oil. Grill eggplant slices. Chop prosciutto and tomato. Arrange on eggplant placed on top of garlic toast. Top with Parmesan. Broil 2-3 minutes until cheese turns brown. (Can also be served cold.)

GRILLED GRAPEFRUIT

4 grapefruit, halved 1 c. sugar 1 c. Kirsch

Cut out centers and remove seeds form each grapefruit half. Sprinkle each half with 2 teaspoons sugar and 2 teaspoons Kirsch. Broil for 5 minutes.

GRILLED EYE OF ROUND WITH AVOCADO

1 eye of round roast Garlic, fresh crushed Ginger, fresh crushed Pepper 1 pkg. Knorr's Bernaise sauce 1 avocado, soft

Rub the eye of round roast with seasonings and sit at room temperature for 40 minutes. Heat grill to medium temperature. Cook the meat uncovered on low rack for 12 minutes, turn grill 12 more minutes, turn grill 15 more minutes. Let set for 15 minutes. Then slice thin. Fix Bernaise according to package. Blend avocado in a blender, add sauce gradually. Serve hot with meat.

GRILLED HONEY MUSTARD SANDWICHES

1/4 cup Dijon mustard 2 tablespoons honey 1 tablespoon chopped fresh oregano leaves or 1 teaspoon dried oregano leaves 1/4 teaspoon garlic powder Makes 4 Sandwiches 1/8 to 1/4 teaspoon ground red pepper (cayenne) 1 teaspoon water 1 pound turkey breast slices, cut into 4 serving pieces 4 whole-grain sandwich buns, split 8 thin slices tomato Leaf lettuce

Mix mustard, honey, oregano, garlic powder, red pepper and water; brush on turkey. 2. Heat coals or gas grill. Cover and grill turkey 4 to 6 inches from medium coals 8 to 10 minutes, brushing with mustard mixture and turning occasionally, until juice is no longer pink when centers of thickest pieces are cut. Discard any remaining mustard mixture. Serve turkey on buns with tomato and lettuce.

Oriental Chicken Grill

Ingredients:
1/2 cup orange juice
2 tablespoons honey
2 tablespoons soy sauce
1 teaspoon lemon-pepper seasoning
1 teaspoon ground ginger
1/2 teaspoon garlic powder
2 boneless skinless chicken breast halves
Directions:
In a small bowl, combine and mix first six ingredients. Set aside 1/4 cup for basting. Put chicken and the rest of mixture into a resealable plastic bag. Put in fridge overnight. Next day drain & discard the mixture. Grill chicken over medium heat. Baste several times with reserved marinade. Serve on rolls with your favorites - lettuce, tomato, etc.
