Roger's famous tortillia soup gets the name Mammoth in the title because we always serve it the last day of summer or the first day of fall in the rental condo in Mammoth.
Mondo Mammoth Sumptuous Shrimp Tortilla Soup
from the Vargo field kitchen
Makes about 6 servings
Serve with a nice salad and warm tortillas for a complete meal
INGREDIENTS
1½ - 2 tablespoon chili powder
about 1 tablespoon oil
1 good sized onion, diced (sweet onions are best)
1 green bell pepper
1 jalapeno pepper, seeded and chopped (optional)
at least 3 garlic cloves, minced
2-14oz cans low sodium chicken broth
8-10 oz (about 1 small package) frozen whole kernel corn
2-7oz cans Herdez (or similar brand) Salsa Casera or Rotel (seasoned diced tomatoes)
1 package salad style tortilla strips
1 pound or so of frozen, cooked medium shrimp, peeled and deveined
juice of 1 lime plus some extra lime slices as condiments
1-2 tablespoons marsala or sherry wine
fresh ground black pepper to taste
sour cream
fresh avocado
grated Mexican cheese
Get the oil good and hot in a Dutch oven or similar pot.
Dump in the onion and bell pepper and jalapeno (if you like). Toss in a little fresh ground black pepper. Stir it around while it cooks.
When the onions and peppers are nearly done, about 5 min., toss in the garlic and the chili powder and stir it around for another minute or so.
Dump in the chicken broth, Casera (tomatoes) and corn.
Let it come to a boil, reduce heat, cover and cook another 10 minutes or thereabouts.
Dump in the shrimp, a couple of tablespoons of tortilla strips and the vino and continue to cook until shrimp is headed through.
Add fresh lime juice and another dollop of vino, stir and serve.
In Serving Bowl: top with more tortilla strips, cheese, avocado and sour cream.
Have some extra lime slices and your favorite hot sauce on hand for those who like extra zest.

Note: If you're tired and you get into the condo late or you are Cecile & you are lazy - go to Von's and buy some of their fresh chicken tortillia soup, sour cream, avocado,shredded cheese, and tortillia strips and you have a quick and easy meal. You could buy some shrimp and add to their soup if you wanted...for a chicken & shrimp tortillia soup. If you can't find the soup....ask Apryl....she knows where they keep it
